These easy-to-make gluten free chewy oatmeal chocolate chip granola bars are a delicious and healthy way to satisfy those hunger cravings!

Today’s granola bar rendition is a little different from the previous coconut bites and no-bake bars in that you a) need to throw it in the oven and b) it doesn’t have ANY peanut butter in it.

I know, I know. But some people aren’t huge peanut butter fans. As shocking as that may sound, it’s true. A very good friend of mine absolutely hates the stuff and our friendship went into question many-a-time due to the fact that I have an obsession and the smell made her want to vomit.

I’m happy to report that we’ve remained friends AND I can throw something together that doesn’t have one of my main food groups.

These bars are super quick and easy to put together (duh.) and they’re especially exceptional right outta the oven.


I brought over a freshly baked one to Brett and before I could get back to the kitchen he was asking for another.

It’s safe to say, I think this one is a hit 🙂

Gluten Free Chewy Oatmeal Chocolate Chip Granola Bars

Check out these easy-to-make gluten free chewy oatmeal chocolate chip granola bars from North Country Nest. They're delicious, can be made vegan with a few substitutions and a great way to satisfy those hunger cravings the healthy way! 

Ingredients

Dry ingredients

  • 4 cups gluten free oats
  • 1/2 cup coconut
  • 1 cup chocolate chips
  • 1/4 cup gluten free flour

Wet ingredients

  • 1/2 cup coconut oil
  • 1/2 cup blue agave nectar
  • 1 tsp vanilla
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350 degrees

  2. In a large bowl, mix together all the dry ingredients

  3. In a saucepan, heat over medium heat and mix together the wet ingredients until the brown sugar has dissolved

  4. Pour the wet ingredients over the dry ingredients and mix thoroughly

  5. Grab a 9x12 pan and either spray with non-stick cooking spray or cover with parchment paper

  6. Pour the ingredients into the pan and pat down until evenly coating the pan

  7. Put in the oven for 20-15 minutes or until golden brown

  8. Remove, let cool and enjoy!
