I am a HUGE fan of breakfast. I’ve even started noticing how much more lethargic and ‘off’ I feel throughout the day if I don’t get something nutritious in the morning.
Generally, I have a set morning routine that I like to follow, especially on the few days I go into the nonprofit’s office. It usually involves cooking up a nice hot breakfast of hash browns, spinach and eggs, reading a book and enjoying a cup of coffee. It’s relaxing and a great way to start the day.
But…. Sometimes mornings don’t always work out as planned and I find myself running around, with no time to make anything.
Quite the problem, I know.
So, in an effort to bring a little normalcy back into those rushed mornings, I whipped up this gluten free breakfast casserole. I can easily take a piece to-go and enjoy when I get into the office, rather than have nothing and pick up a granola bar from the gas station. Broccoli, bacon and eggs or a stale granola bar? Tough choice, right? ?
This casserole is perfect if you’re not riding the carb train and like everything we make, it’s 100% gluten free! For a little more flavor, top it off with a little cheese and a lotta salsa; you can’t go wrong!

Gluten Free Breakfast Casserole with Broccoli, Carrots, Spinach and Bacon
Start your mornings off right with this paleo-friendly, whole30-friendly, gluten free breakfast casserole loaded with broccoli, carrots, spinach and bacon!
Ingredients
- 3 cups broccoli, chopped
- 1 cup carrots, shredded
- 1 handful spinach
- 3 slices cooked bacon, chopped
- 12 eggs
- 1/2 tsp cayenne pepper
- 1 tsp all purpose seasoning
- 1 tsp garlic salt
- 1 tsp ground mustard
Instructions

Preheat oven to 350 degrees and spray a 9 x 12 pan with non-stick spray

Whisk together the eggs and seasoning in a bowl

Layer the broccoli on the bottom of the pan

Sprinkle on the shredded carrots

Top with a handful-ish of spinach (make sure it covers the entire pan)

Add the chopped bacon

Pour the egg mixture over the entire pan; shake the pan a little to let the mixture settle

Bake for 30 - 35 minutes or until the egg is fully cooked
