Gluten Free Breakfast Casserole with Broccoli, Carrots, Spinach and Bacon

Start your mornings off right with this paleo-friendly, whole30-friendly, gluten free breakfast casserole loaded with broccoli, carrots, spinach and bacon!


  • 3 cups broccoli, chopped
  • 1 cup carrots, shredded
  • 1 handful spinach
  • 3 slices cooked bacon, chopped
  • 12 eggs
  • 1/2 tsp cayenne pepper
  • 1 tsp all purpose seasoning
  • 1 tsp garlic salt
  • 1 tsp ground mustard


  1. Preheat oven to 350 degrees and spray a 9 x 12 pan with non-stick spray

  2. Whisk together the eggs and seasoning in a bowl

  3. Layer the broccoli on the bottom of the pan

  4. Sprinkle on the shredded carrots

  5. Top with a handful-ish of spinach (make sure it covers the entire pan)

  6. Add the chopped bacon

  7. Pour the egg mixture over the entire pan; shake the pan a little to let the mixture settle

  8. Bake for 30 - 35 minutes or until the egg is fully cooked
