Strawberry Mint Fizz Cocktail

I’ve been on a champagne kick lately and today’s cocktail is the perfect blend of natural ingredients and fizzy fun – because why not? And by natural ingredients I mean a few things you can grab from your garden – after all, a cocktail can only get so “natural”.

Keeping with last week’s tradition of using garden ingredients, today we’re bringing in mint and strawberries. Our mint has been growing like crazy; I can’t use it up fast enough. The strawberries are a little slower…they’re in the budding phase – still deciding if they want to make an appearance to our garden party. Thankfully, Target had them on sale so I snagged a few containers for today’s recipe.

Before we dive into the good stuff, I need to give a special shoutout to my momma for being the guinea pig during the recipe creation phase. My parents came over to help install the new windows (!!) and I was just setting up to shoot the cocktails.

Since nothing happens perfectly on the first try, my mom took one for the team and tested out the various ingredient combinations before we found the perfect one. And in case you’re wondering, yes, we’re always excepting volunteers for recipe tasting 🙂

Even though summer is starting to wind down (Target already has their summer decor on clearance and the back to school stuff out and ready) today’s drink tastes a million times better when it’s enjoyed outside, on a patio, soaking up the sunshine. I promise, you’ll thank me later.

Strawberry Mint Fizz Cocktail

Easily make this delicious strawberry mint fizz cocktail - a refreshing drink for those summer nights out on the porch!

Ingredients

  • 4 strawberries quartered
  • 6-10 mint leaves
  • ice
  • 1 tbsp simple syrup
  • 1 tsp lemon juice
  • 1/2 shot bacardi rum
  • moscato spumante champagne

Instructions

  1. Place muddled strawberry-mint mixture in 12 oz glass and add ice.

  2. Pour simply syrup and lemon juice over the ice.

  3. Add Bacardi rum and stir.

  4. Top with champagne and enjoy!
