Over the course of my five (almost six) years of being gluten free, I have tried almost every granola bar under the sun. In my pre-gluten free days, one might have called me a granola bar connoisseur. To me, they were their own food group. Since being gluten free, I struggled with finding a granola bar that I really enjoyed and did not taste like sawdust. Fortunately, a good friend brought over these magnificent ‘energy bites’ this past summer and it was love at first bite. Let me tell you, they were amazing. My search for a suitable granola bar was now complete.I can say that I make these every Sunday and they are my mid-morning snack during the work-week. I am so excited to share the recipe and hope you enjoy them as much as me!
Ingredients
1 cup Gluten Free Oats
1/2 cup Raw Almonds
1 tablespoon Chia Seeds
2 tablespoons Ground Flax Seed
1/2 cup Coconut, unsweetened
1/2 cup Ghirardelli Dark Chocolate Chips
1/4 cup Honey
1/4 cup Peanut Butter
[Step 1] Mix the oats, almonds, chia seeds, ground flax, coconut and chocolate chips in a food processor.
[Step 2] Heat the honey and peanut butter in a small sauce pan on medium/medium-low. Mix well.
[Step 3] Transfer the food processor mixture to a medium sized bowl.
[Step 4] Once the honey and peanut butter is mixed, pour over the dry ingredients. Mix well.
[Step 5] Cover and cool in refrigerator for 30 minutes.
[Step 6] Once cool, roll into 1 inch balls and store in refrigerator.
Makes about 24 energy bites.
