Smoothies are my jam. Especially when it’s five million degrees outside, the humidity is doing absolutely nothing good for my hair and we have no air conditioning.

Basically, they’re the perfect way to refresh, stay cool and sneak some extra fruits and veggies into the diet.

While today’s recipe doesn’t call for any vegetables, I did add spinach into another batch and it turned out pretty great. Which reminded me of why I love throwing spinach into my smoothies; all the nutrients and not so much taste. Win-win if you’re not a huge vegetable lover like me.

Speaking of vegetables, we started a garden this year and I am making it my personal mission to start cooking with things we’ve actually made from scratch. Which brings me to today’s recipe…

The rhubarb you see pictured is in fact home grown – it lives in one of the raised beds by the stairs and has been going absolutely crazy the past two months.

In fact, a few weeks ago I gathered a HUGE amount, with these grandiose plans to make all of the things that contained rhubarb.

And then…

Then I completely dropped the ball. As in, I didn’t make a single thing. And I can’t even believe I am admitting this to you right now but I ended up throwing it all away. THE HORROR, I KNOW.

So, in an effort to beat the short timestamp on fresh garden ingredients, I decided to whip something together the same day I cut them off the stalk. Thus, the five ingredient rhubarb peach smoothie was born.

I was a little nervous about how it would taste, given the fact that I’ve never had peaches and rhubarb together. Also that I don’t have the best track record for throwing ingredients together on a whim and making them taste remotely decent.

However, much to my surprise, it’s actually really, really good. A little sour (lemon juice, duh) but the honey counterbalances it a bit along with the sweetness from the peaches.

Best of all, it’s only five ingredients. I mean, who doesn’t love a good smoothie that’s easy and delicious and the perfect refresher for those hot summer days?!

Five Ingredient Peach Rhubarb Smoothie

Enjoy this five-ingredient peach rhubarb smoothie, with fresh ingredients straight from the garden. It's the perfect blend of sour and sweet! 

Ingredients

  • 1 cup fresh peaches sliced
  • 1 cup rhubarb chopped
  • 2 tbsp honey
  • 1 cup ice
  • 1/3 cup fresh squeezed lemon juice

Instructions

  1. Place all ingredients in a blender - we used our favorite Nutribullet - and blend until smooth. 

  2. Garnish with a slice of peach and lemon, if desired.

Now off to clip something else from the garden and see what new concoction I can come up with. And don’t worry, you’ll be the first to know if it works out 🙂
